To mine the ore, you'll need a Copper Pickaxe. You can find the Copper Pickaxe as part of the loot, but the exact time will be random. Once you find the Pickaxe, approach a deposit. Press the action button when the Pickaxe hits the ore deposit, and you'll start adding Copper Ore to your inventory.
